Veggie Power Scramble
For all you movers and shakers that are always on the go, this is my go to recipe when I know I will be in class all day or in meetings. All too often, we forget to eat but with my recipe you will stay fueled up all day. This recipe came to me when my eggs became too boring and didnt feel like they kept me full all day, slowly but surely I added more vegetables until I cultivated this recipe I am sharing with you.
VEGGIE POWER SCRAMBLE
Start to finish:20 minutes
Servings: 2
6 large eggs
2 tablespoons olive oil
½ cup mushrooms
½ cup Red pepper, diced
½ cup Yellow pepper, diced
½ cup Kale, chopped
1 cup Spinach
Onions, chopped
In a small bowl, whisk 6 large eggs. Set aside
In a medium saucepan over medium heat, add 2 tablespoons olive oil. Add onions and saute until lightly brown. Add ½ cup mushrooms, ½ cup red peppers, ½ cup yellow peppers and 1 cup kale. Lightly stir vegetables until combined. Wait 5 minutes.
Add eggs and 1 cup spinach. Mix ingredients until eggs are cooked.
Serve and enjoy. Now you will be able to make it through your “oh so busy” schedule without your belly rumbling.
